About the course
Both the Food Standards Agency and the
'Industry Guides to Good Hygiene Practice' endorse refresher
training. As such the CIEH recommend refresher training
every three years and has developed a new CIEH Foundation
Certificate in Food Hygiene Update refresher qualification
to help food handlers update their knowledge and comply
with best practice in a cost-effective and efficient
manner.
'CIEH Foundation Certificate in
Food Hygiene Update' is a short 2 to 3-hour programme,
which is open to holders of the CIEH Foundation Certificate
in Food Hygiene or equivalent qualifications from other
awarding bodies. Successful candidates will be re-certified
with a full, but current, CIEH Foundation Certificate
in Food Hygiene Update.
Course content
Hazards
– dealing with the problems that are at the
heart of food safety.
Controls
– dealing with issues of prevention and control.
Legal
compliance – dealing with the principles
of food safety legislation and key legal requirements.
The course
programme focuses on a hazard analysis approach and is
in three modules: hazards, controls and the law. It aims
to reinforce good hygiene principles and provides students
with the opportunity of putting their knowledge into practice
through eleven practical exercises.
The qualification is designed to
take place in half a day, lasting between two and three
hours, plus examination time. However, as each of the
three modules is designed to last between 45 minutes
and an hour, the programme could easily be scheduled
to take place over several days.
Exam Format
Assessment is by means of an objective
test of thirty questions.
